Cheesy Baked Squash

- 2 summer squash
- 1 small zucchini
- 5 mushrooms
- 1/2 onion, peeled
- 1 red pepper, seeded
- 1/4 cup olive oil
- 1 clove garlic, peeled and mashed
- 1/4 tsp each oregano and basil
- 1/2 cup grated cheese
- 1/2 cup grated parmesan cheese
- Wash and slice all veggies and steam together until tender.
- Meanwhile, combine olive oil, garlic, oregano, and basil.
- Transfer veggies to a casserole and cover with olive oil mixture and then with the grated cheeses.
- Cover and bake in preheated 350 degree oven for 20 minutes.
- Remove cover and bake for another 10 minutes.
