Cheesy Baked Squash

(from The Baby Cookbook)
  • 2 summer squash
  • 1 small zucchini
  • 5 mushrooms
  • 1/2 onion, peeled
  • 1 red pepper, seeded
  • 1/4 cup olive oil
  • 1 clove garlic, peeled and mashed
  • 1/4 tsp each oregano and basil
  • 1/2 cup grated cheese
  • 1/2 cup grated parmesan cheese
  1. Wash and slice all veggies and steam together until tender. 
  2. Meanwhile, combine olive oil, garlic, oregano, and basil. 
  3. Transfer veggies to a casserole and cover with olive oil mixture and then with the grated cheeses.
  4. Cover and bake in preheated 350 degree oven for 20 minutes. 
  5. Remove cover and bake for another 10 minutes.
