- 3 large zucchini (cubed with peel on)
- 1 large onion, peeled and chopped
- 1 1/2 cups shredded cheese
- 1 can cream of celery (or mushroom) soup
- 2 eggs (beaten)
- 2 tablespoons mayonnaise
- 3 cups bread crumbs
- Steam zucchini and onion, just until slightly tender.
- Place in bowl and add next 5 ingredients and mix well.
- Pour into 15 X 11 X 2 casserole.
- Sprinkle bread crumbs on top.
- Bake at 350 degrees for 35 to 45 minutes.
